
Are you tired of the same green bean casserole at family get togethers? Or can’t stand to eat them out the can? Well try this cajun inspired green bean recipe to liven things up. They are so good you won’t consider green beans a side dish any longer.

Cajun Green Beans
Tire of typical green bean caserole, spice up your life with these
Equipment
- Large Cast Iron pot or just about any pot large enough…
Ingredients
- 1 Cup Celery Diced
- 1/2 Cup Diced Onions
- 4 tbsp Minced Garlic
- 2 pounds Fresh Green beans
- 4 tbsp Olive Oil
- 2 Cups Chicken Stock or Vegetable Stock
- 1/2 Pound Tasso or smoked ham Get the TASSO
- 2 Links Andouille Sausage Optional, but so worth it
- Salt
- Black Pepper
Instructions
Prep
- Mince the GarlicDice the Onions and CelerySlice the Andouille if you chose to use itCube the Tasso
Cook it all Up
- Clarify Celery, Onions and Garlic in Olive oil for 5 minutes
- Add meats and lightly "Brown" for another 5 minutes
- Add green beans
- Add Stock
- Cook on low to medium heat for 40 to 50 minutes
- Salt and Pepper to taste before serving
Notes
The green beans will be overcooked. That is what you are aiming for with this recipe, if you want them firmer, just reduce the time cooked.
This can be served as a main dish over rice if desired. When doing that you may want to thicken with a Roux or corn starch.
